Brown Butter Biscuits Recipe

Ingredients
  • 2 tsps sugar
  • 1 stick unsalted butter
  • 1/2 tsp kosher salt
  • 3/4 c whole milk
  • 2 c and 2 tbsps all-purpose flour, plus more for dusting
  • 1 tbsp baking powder

Directions
  • Step #1 Heat oven to 400° F.
  • Step #2 Brown the butter: Melt the butter in a skillet or small saucepan over med-heat/flame.
  • Step #3 Swirl or stir the butter with a wooden spoon as it starts to foam & sputter.
  • Step #4 Remove the butter from the heat as soon as it begins to turn golden brown & smells nutty, about 1 min.
  • Step #5 Remove from heat & let cool to about room temp.
  • Step #6 In a large bowl, baking powder, sugar, whisk together the flour, & salt.
  • Step #7 Gently stir in the the brown butter & milk.
  • Step #8 On a floured surface, shape the dough with your hands into a 1/2-inch-thick disk.
  • Step #9 Cut the dough into 2-inch round biscuits.
  • Step #10 Place on an ungreased baking sheet & bake this until the tops are lightly golden, 12 to 15 mins.
  • Step #11 Serve warm with jam & clotted cream or butter.
  • Step #12 Tip: Brown butter adds richness to muffins, shortbread, & scones.
  • Step #13 Use it at about room temp as a substitute for the cold butter called for in your recipe.
