Baked Cheese Grits Recipe

Ingredients
  • 1/4 tsp ground red pepper
  • 2/3 c quick-cooking grits
  •  Vegetable cooking spray
  • 1/2 (8-oz) package light pasteurized prepared cheese loaf, cut into 1/2-inch pieces
  • 1/4 tsp salt
  • 2 large eggs, lightly beaten
  • 2 2/3 c water
  • 2 tbsps light margarine

Directions
  • Step #1 Bring 2 2/3 c water to a boil; add grits, stirring often, & cook, 5 mins or until thickened.
  • Step #2 Remove from heat.
  • Step #3 Add margarine & next 4 ingredients, stirring until mixed.
  • Step #4 Spoon mixture into a 2-quart baking dish coated with cooking spray.
  • Step #5 Bake at 350° for 40 mins or until lightly browned.
  • Step #6 NOTE: Casserole may be chilled up to 8 hrs.
  • Step #7 Let stand at about room temp 30 mins; bake as directed.
