Apricot-almond Muffins Recipe

Ingredients
  • 1 c all-purpose flour
  • 1 large egg
  • 1/2 c apricot preserves
  • 1/2 tsp salt
  • 2 tsps granulated sugar
  • 3 tbsps canola oil
  • 2 tsps grated orange rind
  • 1/2 tsp baking soda
  • 1 tsp vanilla extract
  •  Cooking spray
  • 1/2 c packed brown sugar
  • 1 large egg white
  • 1/4 c sliced almonds
  • 1 c whole-wheat flour
  • 1 1/2 tsps baking powder
  • 1/4 tsp almond extract
  • 1 c low-fat buttermilk

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Combine preserves & almond extract in a small bowl.
  • Step #3 Lightly spoon flours into dry measuring c, & level with a knife.
  • Step #4 Combine flours, baking powder, baking soda, & salt In a large-ish bowl; make a well in center of mixture.
  • Step #5 Combine the brown sugar, egg, & egg white in a medium bowl, & stir well with a whisk.
  • Step #6 Add the buttermilk, & vanilla, orange rind, canola oil, & stir well.
  • Step #7 Add to the flour mixture, stirring just until moist.
  • Step #8 Spoon 2 tbsps batter into each of 12 muffin c coated with cooking spray.
  • Step #9 Divide the apricot mixture evenly in the center of each muffin c (do not spread over the batter), & top this with the remaining batter.
  • Step #10 Sprinkle top the batter evenly with 2 tsps granulated sugar & almonds.
  • Step #11 Bake at 400° for 20 mins or until the muffins spring back when touched lightly in center.
  • Step #12 Run a knife or spatula around the outer edge of each muffin c.
  • Step #13 Carefully remove each muffin, & place on a wire rack.
