Oven-puffed Pancake With Fresh Raspberries Recipe

Ingredients
  • 1/3 c all-purpose flour
  • 2 tbsps granulated sugar
  • 1/3 c soy milk
  • 3 large eggs
  • 1 tsp powdered sugar
  •  Cooking spray
  • 1 c fresh raspberries

Directions
  • Step #1 Preheat oven to 425°.
  • Step #2 Lightly spoon flour into a dry measuring c; level with a knife.
  • Step #3 Combine flour, soy milk, granulated sugar, & eggs in a bowl, stirring with a whisk until smooth.
  • Step #4 Pour mixture into a medium nonstick skillet coated with cooking spray.
  • Step #5 Wrap handle of pan with foil wrap.
  • Step #6 Bake at 425° for 18 mins or until puffy & golden.
  • Step #7 Top with raspberries; sprinkle with powdered sugar.
  • Step #8 Serve as soon as possible.
