Blueberry Oatmeal Muffins Recipe

Ingredients
  • 2 tsps grated lemon rind
  • 1 tsp baking soda
  • 2/3 c all-purpose flour (about 3 oz)
  • 1 1/2 c fat-free buttermilk
  •  Cooking spray
  • 2 c frozen blueberries
  • 1/2 c whole wheat flour (about 2 1/3 oz)
  • 2 tsps ground cinnamon
  • 1/4 c canola oil
  • 1 tsp baking powder
  • 2 tbsps granulated sugar
  • 2 large eggs
  • 3/4 c packed light brown sugar
  • 3/4 tsp salt
  • 1 2/3 c quick-cooking oats
  • 2 tbsps all-purpose flour

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Place oats in a food processor/blender; pulse 5 to 6 times until oats resemble coarse meal.
  • Step #3 Place In a large-ish bowl.
  • Step #4 Lightly spoon flours into dry measuring c; level with a knife.
  • Step #5 Add flours & next 5 ingredients (through salt) to oats in bowl; stir well with a whisk.
  • Step #6 Make a well in center of mixture.
  • Step #7 Combine buttermilk, oil, rind, & eggs in small bowl; stir well with a whisk.
  • Step #8 Add to flour mixture, stirring just until moist.
  • Step #9 Toss berries with 2 tbsps flour, & carefully fold them into the batter.
  • Step #10 Spoon batter into 16 muffin c coated with cooking spray; sprinkle batter with 2 tbsps granulated sugar.
  • Step #11 Bake at 400° for 20 mins or until muffins spring back when touched lightly in center.
  • Step #12 Remove from pans as soon as possible.
  • Step #13 Place on a wire rack.
  • Step #14 Serve warm or at about room temp.
