Banana-cinnamon Waffles Recipe

Ingredients
  • 3 tbsps butter, melted
  • 1/4 c buckwheat flour
  • 1/2 c whole wheat flour
  • 1 1/2 tsps baking powder
  • 1/2 tsp ground cinnamon
  • 1 c all-purpose flour
  • 2 tbsps sugar
  • 1 1/2 c fat-free milk
  •  Cooking spray
  • 2 large eggs, lightly beaten
  • 1 large ripe banana, mashed
  • 1/4 tsp salt
  • 1/4 c ground flaxseed

Directions
  • Step #1 Lightly spoon flours into dry measuring c; level with a knife.
  • Step #2 Combine flours, flaxseed, & next 4 ingredients (through salt) in a medium bowl, stirring with a whisk.
  • Step #3 Combine milk, butter, stirring with a whisk; add milk mixture to flour mixture, & eggs, stirring until mixed.
  • Step #4 Fold in mashed banana.
  • Step #5 Preheat a waffle iron.
  • Step #6 Coat iron with cooking spray.
  • Step #7 Spoon about 1/4 c batter per 4-inch waffle onto hot waffle iron, spreading batter to edges.
  • Step #8 Cook 3 to 4 mins or until steaming stops; repeat procedure with remaining batter.
