Ingredients
1 1/2 c low-fat buttermilk
2 large eggs
3 c all-purpose flour
1/3 c firmly packed brown sugar
1 tsp baking powder
1 1/4 c sugar
1/2 tsp salt
3 tbsps all-purpose flour
1 tbsp ground cinnamon
1 tbsp vanilla extract
1/3 c vegetable oil
1/3 c sliced walnuts
1 tsp baking soda
Cooking spray
Directions
Step #1 Preheat oven to 350°.
Step #2 Combine the first 4 ingredients in a small bowl, & stir well.
Step #3 Coat a 12-c Bundt pan with cooking spray; sprinkle 1/3 c of the walnut mixture into pan.
Step #4 Set walnut mixture aside.
Step #5 Combine 1 1/4 c sugar & vegetable oil In a large-ish bowl, & beat at medium speed of a mixer until well-mixed.
Step #6 Add eggs, 1 at a time, beating well after each addition.
Step #7 Combine flour, baking powder, baking soda, & salt; stir well.
Step #8 Add flour mixture to creamed mixture alternately with buttermilk, beginning & ending with flour mixture; mix after each addition.
Step #9 Stir in vanilla.
Step #10 Measure 2 c of batter; set aside.
Step #11 Pour remaining batter into prepared pan; sprinkle remaining walnut mixture over batter.
Step #12 Pour reserved 2 c batter over walnut mixture.
Step #13 Bake at 350° for 45 mins or until a wooden pick inserted in center comes out clean.
Step #14 Let cool in pan 10 mins on a wire rack; remove this from pan.
Step #15 Let cool completely on wire rack.
