Sweet Potato Biscuits Recipe

Ingredients
  • 2 1/2 tsps baking powder
  • 1/2 tsp salt
  • 1 c mashed cooked sweet potato
  • 1/3 c yellow cornmeal
  • 1/2 c fat-free milk
  • 1/3 c chilled butter or stick margarine, cut into small pieces
  • 2 tbsps honey
  • 2 c all-purpose flour

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #3 Combine flour, cornmeal, baking powder, & salt in a bowl; cut in butter with a pastry mixer or 2 knives until mixture resembles coarse meal.
  • Step #4 Add sweet potato, milk, & honey; stir just until moist.
  • Step #5 Turn dough out onto a heavily floured surface; knead lightly 5 times.
  • Step #6 Pat dough into a 9-inch square; cut into 16 squares.
  • Step #7 Place biscuits on a baking sheet.
  • Step #8 Bake at 400° for 20 mins or until golden.
