Eggs With Tortilla Chips, Salsa, And Cheese Recipe

Ingredients
  • 2 tbsps milk or water
  • 1/4 tsp freshly ground black pepper
  • 1 c shredded Monterey jack cheese
  • 3/4 c salsa (drained)
  • 1 1/2 tbsps unsalted butter
  • 1 c crushed tortilla chips
  • 10 eggs
  • 1 tsp kosher salt

Directions
  • Step #1 In a large nonstick skillet, over med-heat/flame, melt the butter.
  • Step #2 Meanwhile, the milk or water, whisk together the eggs, In a large-ish bowl, the salt, & the pepper.
  • Step #3 Pour the mixture into the pan & cook, stirring every once in awhile, to desired doneness, 4 to 5 mins.
  • Step #4 Just before the eggs are set, fold in the cheese.
  • Step #5 When the eggs are cooked, stir in the the salsa & the tortilla chips.
