Pumpkin-date Loaf With Cream Cheese Swirl Recipe

Ingredients
  • 3 tbsps vegetable oil
  • 1/4 tsp baking soda
  • 1 tsp vanilla extract
  • 3/4 c whole pitted dates, sliced (about 5 oz)
  • 1 large egg white, lightly beaten
  • 1 large egg yolk, lightly beaten
  • 3/4 c canned pumpkin
  • 1 large egg, lightly beaten
  • 1 1/2 tsps pumpkin-pie spice
  • 2 c all-purpose flour
  • 2 tbsps granulated sugar
  •  Cooking spray
  • 1/2 tsp salt
  • 1/2 c (4 oz) block-style 1/3-less-fat cream cheese
  • 1 tsp baking powder
  • 1 1/4 c packed dark brown sugar

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Combine first 4 ingredients in a small bowl; beat with a mixer at medium speed until mixed.
  • Step #3 Lightly spoon the flour into dry measuring c, & level with a knife.
  • Step #4 Combine flour & the next 4 ingredients (flour through soda) in a medium bowl, stirring with a whisk.
  • Step #5 Combine egg, egg yolk, & brown sugar in a medium bowl; stir with a whisk until well mixed.
  • Step #6 Add pumpkin & oil; stir well with a whisk.
  • Step #7 Stir in dates.
  • Step #8 Add to flour mixture, stirring just until moist.
  • Step #9 Spoon the batter into a 9 x 5-inch loaf pan coated with cooking spray.
  • Step #10 Spoon cream cheese mixture over batter; swirl batters together using the tip of a knife.
  • Step #11 Bake at 350° for 1 hr or until a wooden pick inserted in center comes out clean.
  • Step #12 Cool for 10 mins in pan on a wire rack; remove this from pan.
  • Step #13 Cool completely on wire rack.
