Pork Tenderloin On Cornmeal Biscuits Recipe

Ingredients
  • 2 tbsps olive oil
  • 4 (3/4- to 1-lb) pork tenderloins
  • 2 tsps salt
  •  Cornmeal Biscuits, halved
  •  Garnish: sliced green onions
  •  Texas Cranberry Chutney
  • 2 tsps ground black pepper

Directions
  • Step #1 Place pork in a lightly greased 15- x 10-inch jelly-roll pan; sprinkle with salt & pepper.
  • Step #2 Rub evenly with oil.
  • Step #3 Broil 5 1/2 inches from heat 5 mins; reduce oven temperature to 450°, & bake 20 mins or until a meat thermometer inserted into thickest portion registers 160°.
  • Step #4 Let stand 15 mins before slicing.
  • Step #5 Cut into 1/4-inch-thick slices (about 18 slices each).
  • Step #6 Place pork slices evenly over Cornmeal Biscuit halves, & top evenly with Texas Cranberry Chutney.
  • Step #7 Garnish, if desired.
