Ingredients
3/4 c hazelnuts
1 tsp mace
1/4 c hazelnut liqueur, such as Frangelico
About 2 tsp. freshly ground black pepper
About 1 tbsp. coarse kosher salt
3 1/2 lbs ground pork
1 tbsp honey
1/2 c sliced fresh flat-leaf parsley
Directions
Step #1 Preheat oven to 375°.
Step #2 Spread hazelnuts on a baking sheet & bake this until toasted & fragrant, about 10 mins.
Step #3 Wrap toasted nuts in a cloth & rub to remove as much skin as possible.
Step #4 Let cool.
Step #5 Transfer to a food processor/blender & pulse until nuts resemble coarse cornmeal.
Step #6 Break pork into small chunks & put In a large-ish bowl.
Step #7 Sprinkle top ground hazelnuts, hazelnut liqueur, pepper, salt, parsley, honey, & mace over the pork.
Step #8 Using your hands, carefully mix all ingredients together.
Step #9 To check seasoning, cook a small amount of sausage in a frying pan over medium-high heat until browned & cooked through.
Step #10 Taste, then season pork mixture with more salt or pepper as desired.
Step #11 Scoop out 1/4-c portions of sausage mixture & form into 3-in.
Step #12 -wide patties.
Step #13 Working in batches, cook patties In a large-ish frying pan over medium-high heat until brown on one side, about 3 mins.
Step #14 Flip patties, & fry until cooked through, reduce heat to medium-low, partially cover, about 5 mins.
Step #15 Note: Nutritional analysis is per patty.
