Herbed-potato Frittata Recipe

Ingredients
  • 1/4 tsp pepper
  • 1 tsp dried basil
  • 3/4 c (3 oz) shredded reduced-fat sharp cheddar cheese
  • 1 garlic clove, minced
  • 1 tbsp reduced-calorie stick margarine
  • 1/3 c sliced green onions
  • 2 c sliced red potato
  • 1/2 tsp dried marjoram
  • 2 (8-oz) cartons egg substitute
  • 1/4 tsp salt

Directions
  • Step #1 Place potato in a saucepan; add water to cover, & bring to a boil.
  • Step #2 Cover up, reduce heat, & let simmer 15 mins or until tender; drain.
  • Step #3 Melt margarine in a 10-inch nonstick skillet over medium-high heat.
  • Step #4 Add potato, onions, & next 5 ingredients; sauté 2 mins.
  • Step #5 Spread mixture evenly in bottom of skillet; pour egg substitute over potato mixture.
  • Step #6 Reduce heat to medium-low, & cook, uncovered, 8 mins or until almost set.
  • Step #7 Wrap handle of skillet with aluminum foil wrap; broil 5 1/2 inches from heat 3 mins.
  • Step #8 Sprinkle top with cheese; broil an extra 30 seconds or until cheese melts.
