Blueberry-almond Streusel Muffins Recipe

Ingredients
  • 1/2 c low-fat buttermilk
  • 2 1/2 c all-purpose flour
  • 1/4 c all-purpose flour
  • 2 tbsps vegetable oil
  • 3/4 c 2% low-fat milk
  • 3 large egg whites
  • 1 tsp baking soda
  • 1/3 c light ricotta cheese
  • 1 tbsp brown sugar
  • 1 c granulated sugar
  • 1 tsp almond extract
  • 1 tbsp reduced-calorie stick margarine, melted
  • 1 tbsp vanilla extract
  • 1 1/3 c blueberries
  • 1/2 c finely sliced almonds
  • 1 tbsp baking powder
  •  Cooking spray
  • 1/2 tsp salt

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Combine first 5 ingredients In a large-ish bowl; make a well in center of mixture.
  • Step #3 Combine milk & next 6 ingredients (milk through egg whites); stir well with a whisk.
  • Step #4 Add to flour mixture, stirring just until moist.
  • Step #5 Gently stir in the blueberries.
  • Step #6 Spoon batter into 18 muffin c coated with cooking spray.
  • Step #7 Combine 1/4 c flour & remaining ingredients; sprinkle evenly over batter.
  • Step #8 Bake at 400° for 18 mins or until done.
  • Step #9 Remove from pans as soon as possible; cool on a wire rack.
