Spoonbread Grits With Savory Mushroom Sauce Recipe

Ingredients
  • 1 (14 1/2-oz) can ready-to-serve chicken broth
  • 1 c buttermilk
  • 1/8 tsp ground red pepper
  • 1 c milk
  •  Savory Mushroom Sauce
  • 1/4 c butter or margarine
  • 1/4 tsp baking soda
  • 1 tsp baking powder
  • 1 c yellow cornmeal
  • 3 large eggs, lightly beaten
  •  Garnish: fresh thyme sprigs
  • 1 tsp salt
  • 1/2 c quick-cooking grits, uncooked

Directions
  • Step #1 Bring broth to a boil In a large-ish saucepan; stir in the grits.
  • Step #2 Reduce heat, & let simmer, stir in the grits.
  • Step #3 Reduce heat, & let simmer, stirring every once in awhile, 5 to 7 mins or until thickened.
  • Step #4 Stir in butter & next 3 ingredients.
  • Step #5 Combine cornmeal & next 4 ingredients; stir in theto grits mixture.
  • Step #6 Pour into a slightly greased 11- x 7-inch baking dish.
  • Step #7 Bake at 425° for 45 mins or until lightly browned.
  • Step #8 Cut into triangles, & serve this with Savory Mushroom Sauce; garnish, if desired.
