Lemon Pancakes With Strawberry Butter Recipe

Ingredients
  • 1/4 c butter or margarine, melted
  • 1/3 c cake flour
  • 1 tbsp grated lemon rind
  • 3 large eggs, separated*
  • 1/4 tsp cream of tartar
  • 1/8 tsp salt
  •  Strawberry Butter
  • 3/4 c ricotta cheese
  • 2 tbsps sugar
  •  Garnish: fresh mint sprigs

Directions
  • Step #1 Beat egg whites & cream of tartar at high speed with an electric mixer until stiff peaks form.
  • Step #2 Beat egg yolks, ricotta cheese, & next 5 ingredients at medium speed with electric mixer until smooth.
  • Step #3 Fold in egg whites.
  • Step #4 Pour about 1/4 c batter for each pancake onto a hot, lightly greased griddle.
  • Step #5 Cook until tops are covered with bubbles & edges looked cooked; turn & cook other side.
  • Step #6 Serve with Strawberry Butter; garnish, if desired.
  • Step #7 *3/4 c egg substitute may be substituted for 3 eggs.
  • Step #8 Whisk together egg substitute, cream of tartar, & next 6 ingredients.
