Strawberry Yogurt Scones Recipe

Ingredients
  • 2/3 c whole wheat flour
  • 1/4 tsp salt
  • 2 tsps baking powder
  • 2/3 c strawberry fat-free yogurt
  • 1 1/2 c all-purpose flour
  • 3/4 c sliced strawberries
  • 1/2 c sugar
  •  Cooking spray
  • 2 tsps sugar
  • 1/2 tsp baking soda
  • 1 large egg white, lightly beaten
  • 1/2 tsp grated orange rind
  • 3 tbsps butter, melted

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Lightly spoon flours into dry measuring c; level with a knife.
  • Step #3 Combine flours, baking powder, 1/2 c sugar, baking soda, & salt In a large-ish bowl.
  • Step #4 Combine strawberries, rind, butter, yogurt, & egg white; add to flour mixture, stirring just until moist.
  • Step #5 Turn dough out onto a lightly floured surface; knead lightly 4 times with floured hands.
  • Step #6 Pat into an 8-inch circle on a baking sheet coated with cooking spray.
  • Step #7 Cut into 12 wedges, cutting into but not through dough; sprinkle with 2 tsps sugar.
  • Step #8 Bake at 400° for 20 mins or until lightly browned.
