Banana-sour Cream Coffee Cake Recipe

Ingredients
  • 1 tsp baking powder
  • 1 1/4 c sugar, divided
  • 1/2 c butter or margarine, softened
  • 1 tsp baking soda
  • 1 c mashed banana
  • 1/2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 c sour cream
  • 1/2 c sliced pecans
  • 1/4 tsp salt
  • 2 c all-purpose flour
  • 2 large eggs

Directions
  • Step #1 Stir together 1/4 c sugar, pecans, & cinnamon; sprinkle half of mixture in a well-greased 12-c Bundt pan.
  • Step #2 Set remaining mixture aside.
  • Step #3 Beat butter at medium speed with an electric mixer until creamy; slowly add in the remaining 1 c sugar, beating 5 to 7 mins.
  • Step #4 Add eggs, 1 at a time, beating just until yellow disappears.
  • Step #5 Add banana, sour cream, & vanilla, beating at lowish speed just until mixed.
  • Step #6 Combine flour & next 3 ingredients; fold into butter mixture.
  • Step #7 Pour half of batter into prepared pan; sprinkle with remaining pecan mixture.
  • Step #8 Top with remaining batter.
  • Step #9 Bake at 350° for 45 mins or until a long wooden pick inserted in center comes out clean.
  • Step #10 Cool in pan on a wire rack 10 mins; remove this from pan, & cool on wire rack.
