Southwest Breakfast Strata Recipe

Ingredients
  • 1 lb mild ground pork sausage
  • 2 c milk
  • 3 c (12 oz) shredded colby-Jack cheese mix
  • 2 (10-oz) cans sliced tomatoes & green chiles
  • 1/2 tsp pepper
  • 6 large eggs
  • 8 (10-inch) flour tortillas, torn into bite-size pieces
  • 1 small onion, sliced
  • 1 tsp salt
  • 1/2 green bell pepper, sliced

Directions
  • Step #1 Cook sausage In a large-ish skillet over medium-high heat, stirring until it crumbles & is no longer pink.
  • Step #2 Drain & return to skillet.
  • Step #3 Add sliced onion & bell pepper to sausage in skillet, & sauté over medium-high heat 5 mins or until vegetables are tender.
  • Step #4 Stir in tomatoes & green chiles; reduce heat & let simmer 10 mins.
  • Step #5 Layer half each of tortilla pieces, sausage mixture, & cheese in a lightly greased 13- x 9-inch baking dish.
  • Step #6 Repeat layers.
  • Step #7 Whisk together eggs, milk, salt, & pepper; pour over layers in baking dish.
  • Step #8 Cover up & chill up to 8 hrs, if desired.
  • Step #9 Bake, lightly covered with aluminum foil wrap, at 350° for 30 mins or until golden & bubbly.
