Red Bell Pepper Frittata Recipe

Ingredients
  • 1/4 tsp black pepper
  • 2 c red bell pepper strips
  • 3 large eggs
  • 1 tbsp water
  • 2 garlic cloves, minced
  • 4 large egg whites
  •  Cooking spray
  • 1/2 c water
  • 1/3 c uncooked couscous
  • 1/3 c (1 1/2 oz) shredded Manchego or Monterey Jack cheese
  • 1 c thinly vertically sliced onion
  • 3/4 tsp salt

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Bring 1/2 c water to boil in a small saucepan; slowly stir in the couscous.
  • Step #3 Remove from heat; cover & let this stand 5 mins.
  • Step #4 Fluff with a fork.
  • Step #5 Combine 1 tbsp water, egg whites, salt, & eggs in a medium bowl, black pepper, stirring with a whisk.
  • Step #6 Heat a 10-inch ovenproof nonstick skillet coated with cooking spray over medium-high heat.
  • Step #7 Add bell pepper, onion, & garlic; sauté 5 mins.
  • Step #8 Stir in couscous & egg mixture; cook over med-heat/flame 5 mins or until almost set.
  • Step #9 Sprinkle top with cheese.
  • Step #10 Bake at 350° for 10 mins or until set.
  • Step #11 Let stand 5 mins before serving.
