Triple-lemon Muffins Recipe

Ingredients
  • 1 1/2 tbsps sugar
  • 1/2 tsp baking soda
  • 2 large eggs
  • 1/2 c sugar
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1 (8-oz) carton lemon low-fat yogurt
  • 1/4 c fresh lemon juice, divided
  • 3 tbsps margarine, melted
  • 1 tsp grated lemon rind
  •  Cooking spray
  • 2 c all-purpose flour

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Combine first 5 ingredients in a medium bowl; make a well in center of mixture.
  • Step #3 Combine margarine, 2 tbsps lemon juice, eggs, lemon rind, & yogurt; stir well with a whisk.
  • Step #4 Add to flour mixture, stirring just until moist.
  • Step #5 Spoon batter into each of 12 muffin c coated with cooking spray.
  • Step #6 Bake at 400° for 20 mins or until golden.
  • Step #7 Combine 2 tbsps lemon juice & 1 1/2 tbsps sugar in a small saucepan; bring to a boil.
  • Step #8 Cook 2 mins or until slightly thick.
  • Step #9 Brush muffins with lemon glaze; remove this from pans.
