Chicken With Raspberry Sauce Recipe

Ingredients
  • 1/2 c raspberry vinegar
  • 1/4 c reduced-sodium soy sauce
  • 1 garlic clove, minced
  • 1/2 tsp chili powder
  • 2 tsps dried basil
  • 3/4 c seedless raspberry preserves, divided
  • 1/2 tsp salt
  • 6 boneless skinless chicken breast halves (1-1/2 lbs)
  • 1/2 c unsweetened pineapple juice
  • 1/4 c unsweetened raspberries
  • 2 tsps cornstarch
  • 2 tbsps balsamic vinegar
  • 1/2 tsp curry powder

Directions
  • Step #1 In a bowl, mix 1/2 c preserves, soy sauce, pineapple juice, raspberry vinegar, balsamic vinegar, garlic & seasonings; mix well.
  • Step #2 Remove 1 c for sauce; cover & put in the fridge.
  • Step #3 Place the chicken in a large resealable plastic bag; add in the remaining marinade.
  • Step #4 Seal bag & turn to coat; put in the fridge for at least 3 hrs.
  • Step #5 Coat grill rack with nonstick cooking spray before starting the grill.
  • Step #6 Drain & discard marinade.
  • Step #7 Grill chicken, uncovered, over med-heat/flame for 5-8 mins on each side or until juices run clear.
  • Step #8 In a small saucepan, mix cornstarch & reserved marinade until mixed.
  • Step #9 Bring to a boil; cook & stir for 2 mins or until thickened.
  • Step #10 Add remaining preserves; mix well.
  • Step #11 Drizzle over chicken.
  • Step #12 Garnish with raspberries.
