Spice Pancakes With Fresh Lemon Sauce Recipe

Ingredients
  • 1/2 tsp salt
  • 1/4 tsp ground cloves
  • 2 tsps dark molasses
  •  Fresh lemon sauce
  •  Lemon leaves (optional)
  • 2 tsps ground ginger
  • 1 1/2 c all-purpose flour
  •  About 3 tbsps butter or margarine, at about room temp
  • 1 tsp baking soda
  • 1 tbsp sugar
  •  Lemon wedges (optional)
  • 1 tsp baking powder
  • 3 large eggs, separated
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 3/4 c buttermilk

Directions
  • Step #1 In a deep bowl with mixer on high speed, whip egg whites until they hold distinct moist peaks.
  • Step #2 In another large bowl (with unwashed beaters), buttermilk, 3 tbsps butter, beat egg yolks, sugar, & molasses until mixed.
  • Step #3 Add flour, baking powder, salt, nutmeg, cinnamon, ginger, baking soda, & cloves.
  • Step #4 Beat until smooth.
  • Step #5 Add whipped whites to batter; fold carefully to mix.
  • Step #6 On a buttered nonstick griddle or 12-inch nonstick frying pan over medium-high heat, pour batter in 1/4-c portions, spacing so pancakes don't touch.
  • Step #7 Cook until tops are full of bubbles, 2 to 3 mins.
  • Step #8 Turn over & cook this until bottoms are golden brown, 1 to 2 mins.
  • Step #9 Repeat to cook remaining batter.
  • Step #10 As pancakes are cooked, stack on plates, or arrange slightly overlapping on baking sheets & keep warm in a 150° oven.
  • Step #11 Serve with warm lemon sauce.
  • Step #12 If desired, garnish with thin lemon slices & leaves.
