Chocolate Chip Banana Breadi Recipe

Ingredients
  • 6 very ripe bananas, mashed
  • 2 c white sugar
  • 3 c all-purpose flour
  • 2 tbsps mayonnaise
  • 1 c semi-sweet chocolate chips
  • 1 tsp baking powder
  • 1/2 c sliced walnuts
  • 2 tsps baking soda
  • 1/2 tsp salt
  • 2 eggs
  • 1 c shortening

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Lightly grease two 9x5 inch loaf pans.
  • Step #3 In a large bowl, cream together the shortening & sugar until light & fluffy.
  • Step #4 Stir in the eggs one at a time, beating well with each addition.
  • Step #5 Stir in the mayonnaise & bananas.
  • Step #6 Stir together the flour, salt, baking powder & baking soda.
  • Step #7 Blend the flour mixture into the banana mixture; stir just enough to evenly mix.
  • Step #8 Fold in the chocolate chips & walnuts.
  • Step #9 Bake at 350 degrees F (175 degrees C) until a toothpick inserted into the center of the loaf comes out clean, about 50 to 75 mins.
  • Step #10 Cool loaf in the pan for 20 mins before removing to a wire rack to cool completely.
