Aravaipa Farms Morning Banana Cake Recipe

Ingredients
  • 1 tsp baking soda
  • 2 tsps vanilla
  • 1 c pecan or walnut halves
  • 1 c dried cranberries
  • 1 c (1/2 lb.) melted butter or margarine
  • 2 large eggs
  • 2 1/3 c all-purpose flour
  • 2 1/2 c sugar
  • 1 c buttermilk
  • 1 c mashed ripe banana
  • 1/4 tsp salt
  • 1 tsp baking powder

Directions
  • Step #1 Mix flour, pecans, baking powder, baking soda, cranberries, & salt.
  • Step #2 In a large bowl, mix sugar, vanilla, banana, & eggs until well mixed.
  • Step #3 Add butter & buttermilk; mix well.
  • Step #4 Add flour mixture to bowl & stir until evenly moistened.
  • Step #5 Butter & flour-dust a nonstick 10-inch decorative tube pan.
  • Step #6 Pour batter into pan.
  • Step #7 Bake in a 350° oven until a long wood skewer, comes out clean, inserted in the thickest part, & cake pulls from pan sides, about 1 hr.
  • Step #8 Cool cake in pan on a rack for 15 mins.
  • Step #9 Lay a rack on top of pan.
  • Step #10 Holding pan & rack together, invert to release cake.
  • Step #11 Lift off pan.
  • Step #12 Serve cake warm or cool.
