Quick-and-easy Quiche Recipe

Ingredients
  • 1 c water
  • 1/2 c sliced green onions
  • 1/2 tsp dry mustard
  •  Cherry tomatoes (optional)
  • 1/4 tsp hot sauce
  • 1 c (4 oz) shredded reduced-fat sharp cheddar cheese
  •  Vegetable cooking spray
  •  Green onion slices (optional)
  • 1/2 c low-fat buttermilk biscuit & baking mix
  • 3/4 c sliced low-salt, reduced-fat ham
  • 1 c egg substitute
  • 1/2 c instant nonfat dry milk powder
  • 1/2 c plain nonfat yogurt
  • 2 tbsps (1/2 oz) grated fresh Parmesan cheese

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Place first 8 ingredients in a food processor/blender, & process 1 min or until smooth.
  • Step #3 Combine egg substitute mixture, ham, cheddar cheese, & green onions in a medium bowl; stir well.
  • Step #4 Pour mixture into 9-inch pie plate coated with cooking spray.
  • Step #5 Bake at 350° for 40 mins or until set.
  • Step #6 Let stand 5 mins before serving.
  • Step #7 Garnish with green onion slices & cherry tomatoes, if desired.
