Cranberry Scones Recipe

Ingredients
  • 1 large egg, lightly beaten
  • 2 tsps baking powder
  • 1/4 tsp salt
  • 2 tbsps chilled butter, cut into small pieces
  • 1 3/4 c all-purpose flour
  • 1/2 c granulated sugar
  • 1/2 tsp grated orange rind
  • 1/4 tsp baking soda
  • 1/2 c halved fresh cranberries
  • 1 tsp powdered sugar
  •  Cooking spray
  • 1/4 c yellow cornmeal
  • 1/2 c low-fat buttermilk

Directions
  • Step #1 Preheat oven to 375°.
  • Step #2 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #3 Combine flour & the next 5 ingredients (flour through salt) in a bowl; cut in butter with a pastry mixer or 2 knives until mixture resembles coarse meal.
  • Step #4 Add cranberries, tossing to coat.
  • Step #5 Combine buttermilk, rind, & egg; add to flour mixture, stirring just until moist (dough will be sticky).
  • Step #6 Turn dough out onto a lightly floured surface, & knead lightly 5 times with floured hands.
  • Step #7 Pat dough into a 7-inch circle on a baking sheet coated with cooking spray.
  • Step #8 Cut the dough into 10 wedges, cutting into but not completely through dough.
  • Step #9 Bake at 375° for 30 mins or until golden.
  • Step #10 Sift powdered sugar over scones; serve warm.
