Blender Crepes Recipe

Ingredients
  •  Cooking spray
  • 2/3 c all-purpose flour
  • 1 tsp granulated sugar
  • 3/4 c fat-free milk
  • 1 large egg

Directions
  • Step #1 Lightly spoon flour into dry measuring c, & level with a knife.
  • Step #2 Combine flour, milk, sugar, & egg in a mixer; cover & process until smooth.
  • Step #3 Pour batter into bowl; cover & chill 30 mins.
  • Step #4 Place an 8-inch crepe pan or nonstick skillet coated with cooking spray over med-heat/flame until hot.
  • Step #5 Remove pan from heat.
  • Step #6 Pour a scant 1/4 c batter into pan; quickly tilt pan in all directions so batter covers pan with a thin film.
  • Step #7 Cook about 1 min.
  • Step #8 Carefully lift edge of crepe with a spatula to test for doneness.
  • Step #9 The crepe is ready to turn when it can be shaken loose from the pan & the underside is lightly browned.
  • Step #10 Turn crepe over; cook 10 seconds on other side.
  • Step #11 Place crepe on towel; cool.
  • Step #12 Repeat procedure until all batter is used, stirring batter between crepes.
  • Step #13 Stack crepes between layers of wax paper or paper towels to prevent sticking.
  • Step #14 Note: Coat pan with cooking spray only as needed while cooking the crepes.
  • Step #15 To make ahead, layer crepes between sheets of wax paper, & store this in a zip-top bag in refrigerator.
