Orange-pecan Muffins Recipe

Ingredients
  • 1 large egg
  • 1/4 c sliced pecans, toasted
  • 2 tbsps thawed orange juice concentrate
  •  Cooking spray
  • 2 tsps baking powder
  • 1/4 tsp salt
  • 3/4 c fat-free milk
  • 2 c all-purpose flour
  • 3 tbsps stick margarine or butter, melted
  • 1 tsp grated orange rind
  • 1/2 c sugar

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #3 Combine flour, baking powder, sugar, & salt In a large-ish bowl.
  • Step #4 Stir in pecans; make a well in center of mixture.
  • Step #5 Combine egg & next 4 ingredients (egg through margarine); stir well with a whisk.
  • Step #6 Add to flour mixture, stirring just until moist.
  • Step #7 Spoon batter into 12 muffin c coated with cooking spray.
  • Step #8 Bake at 400° for 22 mins or until muffins spring back when touched lightly in center.
  • Step #9 Remove muffins from pans as soon as possible; place on a wire rack.
