Baked Polenta With Cheese And Okra Recipe

Ingredients
  • 1/4 c butter or margarine, cut into pieces
  • 1 c uncooked quick-cooking grits
  • 4 c water, divided
  • 6 small fresh okra pods
  • 2 large eggs, lightly beaten
  • 1/2 tsp salt
  • 1 (8-oz) block sharp Cheddar cheese, cubed*

Directions
  • Step #1 Bring 2 c water to a boil In a large-ish saucepan over med-heat/flame; add okra, & cook 10 mins.
  • Step #2 Remove okra with a slotted spoon, reserving liquid in pan; cool okra slightly, & coarsely chop.
  • Step #3 Add remaining 2 c water to reserved liquid; bring to a boil.
  • Step #4 Gradually stir in the grits & salt; return to a boil.
  • Step #5 Cover up, reduce heat, & let simmer 5 to 7 mins.
  • Step #6 Gradually whisk about one-fourth of hot grits into eggs; add to remaining hot mixture, whisking constantly.
  • Step #7 Whisk in butter.
  • Step #8 Stir in okra & cheese.
  • Step #9 Spoon into a lightly greased 11- x 7-inch baking dish.
  • Step #10 Bake at 350° for 55 to 60 mins or until set.
  • Step #11 *2 (4-oz) logs fresh goat cheese, crumbled, may be substituted for Cheddar cheese.
