Baked Oatmeal Recipe

Ingredients
  • 1 tbsp ground cinnamon
  • 1 c firmly packed brown sugar
  • 2 tbsps fresh lemon juice, divided
  • 1 tsp salt
  • 3 large eggs, beaten
  • 2 c frozen blueberries
  • 1 (18-oz.) container regular oats
  • 4 tsps baking powder
  • 1 1/4 c water
  • 1 c milk
  • 1/4 c melted butter
  • 1 c unsweetened applesauce

Directions
  • Step #1 Toss 2 c blueberries in 1 Tbsp.
  • Step #2 lemon juice, & spread evenly on bottom of a lightly greased 13- x 9-inch baking dish.
  • Step #3 Combine oats, next 9 ingredients, & remaining 1 Tbsp.
  • Step #4 lemon juice In a large-ish bowl, stirring until well mixed.
  • Step #5 Pour oat mixture evenly over blueberries.
  • Step #6 Bake, covered, at 350° for 30 mins; uncover & bake 20 more mins or until golden brown & set.
  • Step #7 Apple-Pecan Baked Oatmeal: Place 1/2 c sliced pecans in a single layer on a baking sheet.
  • Step #8 Bake at 350° for 15 mins or until toasted, stirring once.
  • Step #9 Omit blueberries & lemon juice.
  • Step #10 Peel & chop 5 Granny Smith apples.
  • Step #11 Spread on bottom of a lightly greased 13- x 9-inch baking dish.
  • Step #12 Sprinkle top toasted pecans over apples.
  • Step #13 Prepare oat mixture as directed, & pour evenly over apples & pecans.
  • Step #14 Bake as directed.
