Blueberry Crumb Cake Recipe

Ingredients
  •  Cooking spray
  • 3 tbsps sugar
  • 1/8 tsp salt
  • 1 tsp vanilla extract
  • 3 tbsps all-purpose flour
  • 1 1/3 c all-purpose flour
  • 1 c blueberries
  • 2/3 c sugar
  • 1/4 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tbsp stick margarine or butter, melted
  • 3/4 c low-fat buttermilk
  • 1 large egg
  • 1/4 c stick margarine or butter, softened

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Coat a 9-inch round cake pan with cooking spray; line bottom with wax paper.
  • Step #3 Coat wax paper with cooking spray.
  • Step #4 Beat 2/3 c sugar & 1/4 c margarine at medium speed of a mixer until mixed (about 5 mins).
  • Step #5 Add vanilla & egg; beat well.
  • Step #6 Lightly spoon 1 1/3 c flour into dry measuring c; level with a knife.
  • Step #7 Combine 1 1/3 c flour, baking soda, baking powder, & salt.
  • Step #8 Add flour mixture to creamed mixture alternately with buttermilk, beginning & ending with flour mixture.
  • Step #9 Stir in blueberries.
  • Step #10 Pour into prepared pan.
  • Step #11 Combine 3 tbsps sugar & remaining ingredients in a bowl; stir until mixture resembles coarse meal.
  • Step #12 Sprinkle top sugar mixture over batter.
  • Step #13 Bake at 350° for 40 mins or until a wooden pick inserted in center comes out clean.
  • Step #14 Cool on a wire rack.
