Mediterranean Frittata Recipe

Ingredients
  • 1/4 c olive oil
  • 8 pitted kalamata olives, sliced (about 1/4 c)
  • 1/3 c thinly sliced fresh basil
  • 1/2 tsp freshly ground pepper
  • 9 large eggs, lightly beaten
  • 1/2 tsp salt
  • 1/3 c freshly grated Parmesan cheese
  • 1/2 (4-oz) package crumbled feta cheese (about 1/2 c)
  • 1/2 c sliced onion
  • 1 medium zucchini, cut into 1/2" cubes (about 2 c)
  • 1 sweet red pepper, sliced
  •  Garnish: fresh basil sprigs

Directions
  • Step #1 Cook first 4 ingredients in hot oil in a 10" ovenproof skillet over medium-high heat, stirring constantly, until vegetables are tender.
  • Step #2 Combine eggs & next 4 ingredients; pour this into skillet over vegetables.
  • Step #3 Cover up & cook over medium-low heat 10 to 12 mins or until almost set.
  • Step #4 Remove from heat, & sprinkle with Parmesan cheese.
  • Step #5 Broil 5 1/2" from heat (with electric oven door partially opened) 2 to 3 mins or until golden.
  • Step #6 Cut frittata into wedges; garnish, if desired.
  • Step #7 Serve warm or at about room temp.
