Spinach Frittata Recipe

Ingredients
  • 3 tbsps part-skim ricotta
  • 1/8 tsp black pepper
  • 1 egg yolk
  • 1 c fresh spinach
  • 2 egg whites

Directions
  • Step #1 Heat oven to 350° F.
  • Step #2 Pour about 1/2 inch of water into a small saucepan & bring to a simmer over medium-high heat.
  • Step #3 Fit a steamer basket in pan.
  • Step #4 Place the spinach in steamer, & steam until the spinach is wilted, cover, 1 to 2 mins.
  • Step #5 In a medium bowl, whisk together the egg whites, yolk, & pepper.
  • Step #6 Stir in the steamed spinach.
  • Step #7 Pour the mixture into a 6-inch nonstick ovenproof skillet.
  • Step #8 Top with spoonfuls of the ricotta & bake 12 to 15 mins or until set.
  • Step #9 Using a rubber spatula, slide the frittata onto a plate.
  • Step #10 Sprinkle top with extra pepper (if desired).
