Shrimp, Peppers, And Cheese Grits Recipe

Ingredients
  • 1/2 c sliced green onions
  • 1 c green bell pepper strips
  • 1 1/2 lbs medium shrimp, peeled & deveined
  • 1 (10-oz) can sliced tomatoes & green chiles, drained
  • 1 2/3 c fat-free milk
  • 1/2 c sliced Canadian bacon
  • 1 c red bell pepper strips
  • 1 c uncooked quick-cooking grits
  • 1 (16-oz) can fat-free, less-sodium chicken broth
  • 1 c (4 oz) shredded reduced-fat sharp cheddar cheese

Directions
  • Step #1 Cook bacon in a skillet over med-heat/flame 3 mins or until lightly browned, stirring frequently.
  • Step #2 Add bell peppers; cook 10 mins, stirring every once in awhile.
  • Step #3 Add tomatoes; cook 5 mins.
  • Step #4 Add shrimp; cook 3 mins.
  • Step #5 Stir in green onions; keep warm.
  • Step #6 Combine milk & broth in a saucepan.
  • Step #7 Bring to a boil, & stir in the grits.
  • Step #8 Bring to a boil; reduce heat, & cook for 5 mins or until thick, stirring every once in awhile.
  • Step #9 Stir in cheese.
  • Step #10 Serve shrimp mixture over grits.
