Cheddar And Chive Scones Recipe

Ingredients
  • 1 c (about 4 oz) grated Cheddar
  • 1 tbsp finely sliced fresh chives
  • 1 1/4 tsps kosher salt
  • 1 tbsp sugar
  • 1 tbsp baking powder
  • 2/3 c heavy cream, plus 1 tbsp for brushing
  • 1 stick unsalted butter, chilled & cut into a 1/4-inch dice
  • 2 c all-purpose flour

Directions
  • Step #1 Heat oven to 425° F.
  • Step #2 In a large bowl, sugar, baking powder, mix the flour, & salt.
  • Step #3 Using a pastry mixer or 2 knives held crisscross fashion, cut in the butter until the mixture resembles coarse crumbs.
  • Step #4 Stir in 2/3 c of the cream.
  • Step #5 Add the Cheddar & chives & use your hands to mix; the dough should be crumbly.
  • Step #6 Knead the dough a couple of times until it comes together.
  • Step #7 Gently pat it into a ball, then flatten slightly into a 1-inch-thick disk.
  • Step #8 Transfer to a baking sheet.
  • Step #9 Slice into quarters, then cut each quarter in half.
  • Step #10 Brush the top this with the remaining cream.
  • Step #11 Bake for about 30 mins or until golden.
  • Step #12 Tip: For a hearty sandwich, spread it with mustard, split a scone in half, & fill it with leftover turkey or ham.
