Tex-mex Brunch Wraps Recipe

Ingredients
  • 1 red bell pepper, finely sliced
  • 2 tbsps butter
  • 1/2 tsp coarsely ground pepper
  • 1 (8-oz.) package shredded Cheddar-Jack cheese with peppers
  • 6 green onions, thinly sliced
  • 10 (8-inch) soft taco-size flour tortillas
  • 1 (1-lb.) ham steak, sliced
  • 1 (16-oz.) can refried beans
  • 10 large eggs

Directions
  • Step #1 Melt butter In a large-ish skillet over medium-high heat.
  • Step #2 Add bell pepper & green onions, & sauté 2 mins or until tender.
  • Step #3 Stir in ham, & cook 2 more mins or until thoroughly heated.
  • Step #4 Whisk together eggs & pepper.
  • Step #5 Pour egg mixture over ham mixture in skillet.
  • Step #6 Cook, without stirring, over med-heat/flame until eggs begin to set on bottom.
  • Step #7 Gently stir this to break up eggs.
  • Step #8 Cook, stirring every once in awhile, 2 to 3 mins or until eggs are thickened & moist.
  • Step #9 (Do not overstir.
  • Step #10 ) Spoon egg mixture into a large bowl; let cool 15 mins.
  • Step #11 Meanwhile, cut 10 (12-inch) aluminum foil wrap squares.
  • Step #12 Spread 2 Tbsp.
  • Step #13 beans down center of each tortilla; top each with 1/4 c egg mixture, & sprinkle with 2 Tbsp.
  • Step #14 cheese.
  • Step #15 Roll up tortillas; wrap each tightly in a piece of foil wrap, & crimp edges under.
  • Step #16 Place wraps on a jelly-roll pan.
  • Step #17 Bake at 350° for 15 mins or until wraps are thoroughly heated.
  • Step #18 Note: To make ahead, prepare wraps as directed through Step Store in refrigerator overnight.
  • Step #19 Bake at 350° for 25 mins or until thoroughly heated.
