2 tbsps chilled stick margarine, cut into small pieces
2 tsps baking powder
Vegetable cooking spray
1/4 c yellow cornmeal
1/4 tsp butter extract
1/4 c boiling water
1 tsp vanilla extract
3/4 c dried tart cherries
1 3/4 c all-purpose flour
1/3 c plain nonfat yogurt
Directions
Step #1 Combine cherries & boiling water in a bowl; cover & let this stand 10 mins or until softened.
Step #2 Drain & set aside.
Step #3 Combine flour, 1/3 c sugar, baking powder, cornmeal, & salt In a large-ish bowl; cut in the margarine & shortening with a pastry mixer or 2 knives until mixture resembles coarse meal.
Step #4 Combine cherries, milk, & add to dry ingredients, & extracts, yogurt, stirring just until dry ingredients are moistened (dough will be sticky).
Step #5 Pat the dough with floured hands into an 8-inch round cake pan coated with cooking spray.
Step #6 Brush egg white over surface of dough, & sprinkle with 2 tsps sugar.
Step #7 Bake at 425° for 20 mins or until a wooden pick inserted in center comes out clean.
