Tart Cherry-and-vanilla Scones Recipe

Ingredients
  • 2 tsps sugar
  • 1/4 c evaporated skimmed milk
  • 1 egg white, lightly beaten
  • 1/4 tsp salt
  • 2 tbsps vegetable shortening
  • 1/3 c sugar
  • 2 tbsps chilled stick margarine, cut into small pieces
  • 2 tsps baking powder
  •  Vegetable cooking spray
  • 1/4 c yellow cornmeal
  • 1/4 tsp butter extract
  • 1/4 c boiling water
  • 1 tsp vanilla extract
  • 3/4 c dried tart cherries
  • 1 3/4 c all-purpose flour
  • 1/3 c plain nonfat yogurt

Directions
  • Step #1 Combine cherries & boiling water in a bowl; cover & let this stand 10 mins or until softened.
  • Step #2 Drain & set aside.
  • Step #3 Combine flour, 1/3 c sugar, baking powder, cornmeal, & salt In a large-ish bowl; cut in the margarine & shortening with a pastry mixer or 2 knives until mixture resembles coarse meal.
  • Step #4 Combine cherries, milk, & add to dry ingredients, & extracts, yogurt, stirring just until dry ingredients are moistened (dough will be sticky).
  • Step #5 Pat the dough with floured hands into an 8-inch round cake pan coated with cooking spray.
  • Step #6 Brush egg white over surface of dough, & sprinkle with 2 tsps sugar.
  • Step #7 Bake at 425° for 20 mins or until a wooden pick inserted in center comes out clean.
