Smoked Chops-and-cheese Omelet Recipe

Ingredients
  • 1/4 tsp salt
  • 2 small plum tomatoes, sliced
  • 4 tsps butter, divided
  • 1/4 tsp pepper
  • 2/3 c shredded Gouda cheese
  • 6 large eggs
  • 1 1/4 c sliced smoked pork chops (about 1 lb.)
  • 2 tbsps finely sliced onion
  • 1 tbsp sliced fresh parsley

Directions
  • Step #1 Cook sliced pork in an 8-inch nonstick omelet pan or heavy skillet with sloped sides over medium-low heat 5 mins or until thoroughly heated.
  • Step #2 Add tomatoes & onion, stirring often, & cook, until onion is tender.
  • Step #3 Remove pork mixture from pan; set aside.
  • Step #4 Wipe skillet clean with paper towels.
  • Step #5 Whisk together eggs & next 3 ingredients.
  • Step #6 Melt 1 tsp.
  • Step #7 butter in same skillet over med-heat/flame.
  • Step #8 Pour one-fourth egg mixture into skillet.
  • Step #9 As egg mixture starts to cook, carefully lift edges of omelet with a spatula, & tilt pan so uncooked portion flows underneath.
  • Step #10 Cook 1 to 2 mins or until almost set.
  • Step #11 Flip omelet over.
  • Step #12 Sprinkle top 1 side of omelet with one-fourth each of cheese & reserved sliced pork mixture.
  • Step #13 Cook 1 min or until cheese begins to melt.
  • Step #14 Slide filled side of omelet onto a plate, flipping remaining side of omelet over filling.
  • Step #15 Repeat procedure 3 times with remaining butter, egg mixture, cheese, & pork mixture.
  • Step #16 Serve as soon as possible.
  • Step #17 Note: For testing purposes only, we used Smithfield Smoked Pork Chops.

  • Step #19 ) carton garden vegetable flavor egg substitute for eggs, salt, parsley, & pepper.
