Cornbread Crêpes Recipe

Ingredients
  • 1/4 c vegetable oil
  • 2 1/2 c buttermilk
  • 1 c coarsely sliced fresh corn kernels (about 3 to 4 ears)*
  • 4 large eggs
  • 3/4 c all-purpose flour
  • 3/4 c cornmeal
  • 1 1/2 tsps salt

Directions
  • Step #1 Process first 6 ingredients in a mixer until smooth, stopping once to scrape down sides.
  • Step #2 Transfer to a bowl.
  • Step #3 Stir in corn, & chill 1 hr.
  • Step #4 Coat a 7-inch nonstick skillet with vegetable cooking spray; place over med-heat/flame until hot.
  • Step #5 Pour 1/4 c batter into pan; quickly tilt pan in all directions so batter covers bottom of pan.
  • Step #6 Cook 3 mins or until top is set.
  • Step #7 Turn out onto wax paper; cool.
  • Step #8 Repeat with remaining batter.
  • Step #9 *1 c coarsely sliced frozen whole kernel corn may be substituted for frozen corn.
