Blueberry Waffles Recipe

Ingredients
  • 1 tbsp baking powder
  •  Dash of salt
  •  Vegetable cooking spray
  • 1 3/4 c skim milk
  • 1 egg, lightly beaten
  • 2 egg whites, lightly beaten
  • 3 tbsps vegetable oil
  •  Additional blueberries (optional)
  • 1 c fresh or frozen blueberries
  • 1 3/4 c all-purpose flour

Directions
  • Step #1 Combine first 3 ingredients in a medium bowl; stir well.
  • Step #2 Combine milk, oil, egg whites, & egg in a small bowl; stir well.
  • Step #3 Add to flour mixture, stirring until well-mixed.
  • Step #4 Coat a waffle iron with cooking spray, & preheat.
  • Step #5 Spoon about 1/3 c of batter per waffle onto hot waffle iron, spreading batter to edges.
  • Step #6 Spoon 2 tbsps blueberries per waffle evenly over batter.
  • Step #7 Cook 6 to 7 mins or until steaming stops; repeat procedure with remaining batter & blueberries.
  • Step #8 Serve with syrup.
  • Step #9 Garnish with extra blueberries, if desired.
  • Step #10 Note: If you are using frozen blueberries, do not thaw them before adding to batter.
