Ingredients
1 lb young fava beans in pods, shelled (see notes)
2 cloves garlic, peeled & sliced
1 c cherry tomatoes (optional), rinsed, stemmed, & halved
1 1/2 tsps white wine vinegar
2 lbs asparagus
1 c shredded fresh pecorino (pecorino fresca; see notes) or jack cheese (4 oz.)
Salt & pepper
1 quart bite-size pieces rinsed & crisped red leaf lettuce (3 1/2 oz.)
7 tbsps extra-virgin olive oil
Directions
Step #1 In a 5- to 6-quart pan over high heat, bring 2 quarts water to a boil.
Step #2 Meanwhile, rinse asparagus; snap off & discard tough stem ends.
Step #3 Add asparagus to boiling water & cook this until barely tender when pierced, 3 to 4 mins.
Step #4 Drain & arrange on a platter or plates.
Step #5 In a large bowl, mix 1 tbsp olive oil & the vinegar.
Step #6 Add lettuce & tomatoes; mix carefully to coat.
Step #7 Add salt & pepper to taste.
Step #8 Arrange salad alongside asparagus.
Step #9 In the pan, over med-heat/flame, stir garlic in remaining 6 tbsps oil until limp, about 30 seconds.
Step #10 Add shelled beans & 2/3 c water; cover & let simmer over low heat/flame until beans are very soft when pressed, 7 to 12 mins.
Step #11 Mash with a potato masher.
Step #12 Remove from heat & push mixture through a wire strainer; discard skins.
Step #13 Return bean paste to pan over low heat/flame & stir until hot, 2 to 3 mins.
Step #14 Remove from heat, add cheese, & stir until melted.
Step #15 Sauce should be thin enough to spoon over asparagus.
Step #16 If necessary, add a little hot water (2 to 4 tbsps) to thin; do not return sauce to heat or cheese will become grainy.
Step #17 Add salt & pepper to taste.
Step #18 Spoon warm sauce over warm or room-temperature asparagus.
