Chocolate Mint Candy Pie Recipe

Ingredients
  • 1 c whipping cream, whipped
  • 1 (7 oz) jar marshmallow creme
  • 6 oz small soft chocolate covered mints
  • 1 (8 oz) package cream cheese, softened
  • 1 tbsp instant coffee powder
  • 1 (13 oz) package brownie mix
  • 1 tbsp hot water

Directions
  • Step #1 Prepare brownie mix according to package directions & bake in a greased 9 inch round cake pan.
  • Step #2 Set aside to cool.
  • Step #3 In a large bowl, dissolve the coffee powder in the water.
  • Step #4 Add the cream cheese & beat with an electric mixer until smooth.
  • Step #5 Blend in marshmallow creme.
  • Step #6 Melt mints by placing them in a microwave-safe bowl & heat at high for 1 1/2 to 2 mins; stir until smooth.
  • Step #7 Or, place mints in small saucepan & stir over low heat/flame until melted.
  • Step #8 Stir melted mints into the cream cheese mixture.
  • Step #9 Fold in the whipped cream & spread into the cooled crust.
  • Step #10 Loosely cover, place this into the refrigerator & chill for several hrs before serving.
