Frittata With Leeks, Spaghetti, And Zucchini Recipe

Ingredients
  • 1/4 tsp black pepper
  • 1/3 c 1% low-fat milk
  • 1/4 tsp salt
  • 1 tbsp butter or stick margarine, divided
  • 2 c hot cooked spaghetti (about 4 oz uncooked pasta)
  • 1 1/2 c sliced zucchini
  • 4 large egg whites
  • 3 large eggs
  • 2 c thinly sliced leek
  • 1/3 c (about 1 1/2 oz) shredded Gruyère or Swiss cheese
  • 2 tsps sliced fresh basil

Directions
  • Step #1 Heat 1 1/2 tsps butter in a skillet over med-heat/flame.
  • Step #2 Add leek & zucchini; sauté 6 mins or until lightly browned.
  • Step #3 Combine milk & next 5 ingredients (milk through eggs) in a bowl; stir with a whisk.
  • Step #4 Stir in leek mixture & spaghetti.
  • Step #5 Preheat broiler.
  • Step #6 Heat 1 1/2 tsps butter in skillet over low heat/flame.
  • Step #7 Add egg mixture.
  • Step #8 Cover up; cook 10 mins or until almost set.
  • Step #9 Top with cheese.
  • Step #10 Wrap handle of skillet with foil wrap.
  • Step #11 Broil 5 mins or until cheese melts.
