Ingredients
3 c fat-free milk, divided
3 tbsps sliced fresh basil, divided
4 large eggs
2 tsps olive oil
2 large egg whites
3 c quartered cremini mushrooms (about 6 oz)
Cooking spray
1 c finely sliced red bell pepper
3/4 c (3 oz) shredded Asiago cheese, divided
1/4 tsp black pepper, divided
2 garlic cloves, minced
1 (10-oz) package frozen sliced spinach, thawed, drained, & squeezed dry
3/4 c sliced prosciutto (about 3 oz)
1/4 tsp kosher salt, divided
1 c sliced green onions
1 (16-oz) loaf peasant bread, cut into 2-inch cubes
Directions
Step #1 Combine 2 c milk & onions In a large-ish bowl.
Step #2 Add bread, tossing carefully to coat.
Step #3 Cover up & chill for 30 mins.
Step #4 Stir in spinach.
Step #5 Preheat oven to 375°.
Step #6 Heat the oil In a large-ish nonstick skillet over medium-high heat.
Step #7 Add mushrooms; sauté 5 mins.
Step #8 Add bell pepper; sauté 3 mins.
Step #9 Add prosciutto & garlic; sauté 1 min.
Step #10 Remove from heat; stir in the 1 tbsp basil, 1/8 tsp salt, & 1/8 tsp black pepper.
Step #11 Place 1 c milk, 2 tbsps basil, 1/8 tsp salt, 1/8 tsp black pepper, eggs, & egg whites In a large-ish bowl; stir well with a whisk.
Step #12 Place half of bread mixture in an 11 x 7-inch dish coated with cooking spray.
Step #13 Spoon mushroom mixture over bread mixture, & sprinkle with half of cheese.
Step #14 Top with remaining bread mixture.
Step #15 Pour egg mixture over bread mixture; sprinkle with remaining cheese.
Step #16 Bake at 375° for 1 hr or until set.
