Ham And Swiss Bread Pudding Recipe

Ingredients
  • 1/4 tsp freshly ground black pepper
  • 3/4 c egg substitute
  • 3/4 c (3 oz) shredded Swiss cheese, divided
  • 7 (1-oz) Hawaiian bread rolls, cut into 1/2-inch cubes
  • 2 tbsps Dijon mustard
  • 1/8 tsp ground nutmeg
  • 1 1/4 c sliced green onions
  • 3/4 c sliced ham (about 3 oz)
  • 1 3/4 c fat-free milk
  •  Cooking spray
  • 1/4 tsp salt
  • 2 garlic cloves, sliced

Directions
  • Step #1 Heat a small nonstick skillet coated with cooking spray over medium-high heat.
  • Step #2 Add onions, ham, & garlic; sauté 5 mins.
  • Step #3 Remove from heat; cool.
  • Step #4 Preheat oven to 350°.
  • Step #5 Arrange bread cubes on a baking sheet.
  • Step #6 Bake at 350° for 15 mins or until lightly browned, turning every once in awhile.
  • Step #7 Combine milk & next 5 ingredients (milk through nutmeg) In a large-ish bowl, stirring with a whisk until well mixed.
  • Step #8 Stir in ham mixture.
  • Step #9 Add bread, tossing carefully to coat.
  • Step #10 Arrange half of bread mixture in an 8-inch square baking dish coated with cooking spray.
  • Step #11 Sprinkle top with half of cheese; top this with remaining bread mixture.
  • Step #12 Bake at 350° for 25 mins.
  • Step #13 Sprinkle top with remaining cheese; bake an extra 20 mins or until set.
