Pain Perdu Recipe

Ingredients
  • 4 tbsps cream cheese (optional)
  • 4 c raspberries & blueberries
  • 2 (16-oz) French bread loaves
  • 1 1/2 c Champagne
  • 2 c cane syrup
  • 8 large eggs
  • 1 c sugar
  • 4 c whipping cream
  • 4 tsps vanilla extract
  •  Garnish: powdered sugar
  • 1 1/2 tsps ground nutmeg
  • 1/2 to 1 tbsp ground cinnamon

Directions
  • Step #1 Cut bread into 24 (3/4-inch-thick) diagonal slices.
  • Step #2 Whisk together eggs & next 5 ingredients until well mixed.
  • Step #3 Place bread slices in a 13- x 9-inch baking dish; pour egg mixture evenly over slices.
  • Step #4 Let stand 30 mins or until liquid is absorbed.
  • Step #5 Remove bread slices from egg mixture, letting excess drip off.
  • Step #6 Cook bread slices, in batches, in a lightly greased nonstick skillet or griddle over medium-high heat 2 mins on each side or until golden.
  • Step #7 Place bread slices on baking sheets; keep warm in a 200° oven.
  • Step #8 Cook Champagne In a large-ish saucepan over high heat until reduced by half.
  • Step #9 Gradually stir in the syrup; cook over low heat/flame until mixed & warm.
  • Step #10 Arrange bread slices on serving plates; top this with raspberries, if desired, blueberries and, cream cheese.
  • Step #11 Drizzle evenly with syrup mixture.
  • Step #12 Garnish, if desired.
