Coconut Banana Bread Recipe

Ingredients
  • 1 tsp rum extract
  • 2 3/4 c all-purpose flour
  • 2 eggs
  • 1 1/4 tsps baking soda
  • 1 c flaked coconut
  • 6 (1 oz) squares white baking chocolate, coarsely sliced
  • 1 c sliced pecans
  • 1 1/2 c sugar
  • 1 tsp vanilla extract
  • 2 c mashed ripe bananas
  • 1 c butter or margarine, melted
  • 1/2 tsp salt

Directions
  • Step #1 In a mixing bowl, mix butter & sugar; mix well.
  • Step #2 Add eggs & extracts; beat on high speed until thickened.
  • Step #3 Stir in bananas.
  • Step #4 Combine the flour, baking soda & salt; slowly add to banana mixture.
  • Step #5 Fold in the chocolate, coconut & pecans.
  • Step #6 Transfer to two greased 8-in.
  • Step #7 x 4-in.
  • Step #8 x 2-in.
  • Step #9 loaf pans.
  • Step #10 Bake at 350 degrees F for 70-75 mins or until a toothpick comes out clean.
  • Step #11 Cool for 10 mins before removing from pans to wire racks.
