Orange-coconut Bread Recipe

Ingredients
  • 2 tsps grated orange rind
  • 1 (8-oz) carton orange fat-free yogurt
  • 2 c all-purpose flour (about 9 oz)
  • 1 c sugar
  • 1/4 c 2% reduced-fat milk
  • 5 tbsps flaked sweetened coconut, divided
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 large egg
  • 1 tbsp canola oil
  •  Cooking spray

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Combine 1 c sugar, & egg in a medium bowl, oil, & stir with a whisk until smooth.
  • Step #3 Stir in milk & yogurt.
  • Step #4 Lightly spoon flour into dry measuring c, & level with a knife.
  • Step #5 Combine flour, 1/4 c coconut, baking soda, & 1/2 tsp salt In a large-ish bowl, orange rind, stirring with a whisk.
  • Step #6 Make a well in the center of flour mixture, & add milk mixture to flour mixture, stirring just until moist.
  • Step #7 Spoon batter into a 9 x 5-inch loaf pan coated with cooking spray.
  • Step #8 Sprinkle top with remaining 1 tbsp coconut.
  • Step #9 Bake at 350° for 50 mins or until a wooden pick inserted in center comes out clean.
  • Step #10 Cool in pan 10 mins.
