Quick Double-cheese Grits Recipe

Ingredients
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 1 c (4 oz) shredded Monterey Jack cheese
  • 2 tbsps butter or margarine
  • 1 c (4 oz) shredded extra-sharp Cheddar cheese
  • 1 1/2 c quick-cooking grits
  • 6 c water

Directions
  • Step #1 Bring 6 c water & salt to a boil In a large-ish saucepan.
  • Step #2 Gradually stir in the grits.
  • Step #3 Cook 4 to 5 mins, stirring often, until thickened.
  • Step #4 Remove from heat.
  • Step #5 Add shredded cheeses, butter, & pepper, stirring until mixed.
  • Step #6 Serve as soon as possible.
  • Step #7 Note: Grits may be chilled & reheated.
  • Step #8 Whisk 1/4 c warm water into grits over medium-heat, adding more water as necessary.
